Recipe Ideas To Make A Loving Keto Valentine's Meal

What better way to woo your loved one this Valentine’s day than with a hearty, generous meal made with love and care? If your partner is following a low-carb or keto lifestyle, there’s no bigger gesture of love than making delicious food that caters to their dietary needs. We believe that sharing food is a love language - so if you’re following a keto or low-carb diet,  then tucking into a yummy, guilt-free meal with your loved one is a must this Valentine’s day.


Here’s a heartfelt menu of dishes for you to cook for, or even with, your loved one! Whether you’ll be spending this special Valentine’s day with your family, friends or partner, this feast will have both their stomach and hearts feeling full!

 

Starters

Start off the meal with flavourful bites to get both your stomachs prepped for the hearty meal ahead!

Garlic-Lemon Butter Scallops 

Scallops are a boujie delight that when done right, can get your love hormones going! You can even shape each of the scallops into lil’ hearts to really show your love.


Cook your scallops in a pan until golden brown all over and take them out when done. Combine butter, plenty of garlic and chicken broth in the pan. Cook for a couple of minutes before adding another chunk of butter, lemon juice and zest and chopped herbs. Add your scallops to warm them up again. That’s all! Your scallops are warm, rich in flavour and ready to woo the heart and stomach of your loved one.

Heartfelt Eggs

Simply boil a couple eggs each, slice them in half and spoon out the yolk. Then combine 3 tbsp mayonnaise, 1 tbsp beetroot powder, ¼ cayenne pepper and ⅓ tsp salt, spoon into a piping bag and pipe this delicious, pink mixture right where the yolk usually goes! Voila - you have some adorable eggs to start off your meal.

 

Main

Every aspect of the main needs to be flavour-packed and soul-warming. The biggest part of the meal can’t be lacking flavour and love!

Goats Cheese & Spinach Stuffed Chicken & Waffles

A crisp, stuffed chicken with some golden waffles is an indulgent, filling main that is bound to become the highlight of your meal. Cook about two cups of spinach in a pan with some olive oil and garlic powder until fully wilted. In a bowl, combine about 1 ounce of goat cheese with the spinach. Simply make an incision on the side of each chicken breast and stuff them with spinach and goats cheese.


—> For some more flavour, you can instead butterfly the chicken to gently tenderise them and then marinate in a mixture of your choice, perhaps some olive oil, garlic and thyme. You can then add your cheese mixture to the chicken breast and fold over the chicken breast.

Comfort Food - Burgers

Burgers are a classic that we all love and miss on the keto diet. The perfect burger can really hit the spot, especially when cooked with love. How can burgers be made keto-friendly, you may ask? We all know that the burger bun is the most problematic, high-carb part of a burger.

Chocolate Mousse

This speedy, indulgent dessert is the perfect treat to whip up after a long day in the kitchen! Just throw all of the ingredients into a bowl and you’re all done.


All you need to do is beat 2 ounces of softened cream cheese until light and fluffy. Turn your mixer to a lower speed, adding ½ cup of heavy cream and 1 teaspoon of vanilla extract. Then add in a ¼ cup of your keto-friendly sweetener, 2 tablespoons of Cocoa Plus powder and a pinch of salt. Beat until light and fluffy with the mixer on high, just for a minute or two. You can of course adjust the measurements to taste - add extra cocoa powder for a more rich, decadent treat! And there you have it - simply serve in small bowls.
