Keto Tacos Recipe

Here at NGB, we’re always looking for new ways that you can use our baking mixes, and get the most out of each pack. Which is why we’ve developed a recipe for one of the world’s favourite crowd-pleasers: Tacos! Not only is our recipe low-carb and wonderfully keto-friendly, but it's also super easy to make using our NGB Pancake & Waffle Mix! Our recipe makes 6 of these flavoursome Mexican delights, so they’re perfect for a lunch to share with your loved ones!

Ingredients:

Tortillas
1 1/4 Cup (150 g) Pancake & Waffle Mix + extra for rolling
1/2 Cup (120 ml) Milk
1 Egg

Filling
1 Tbsp vegetable oil
1 Small onion, chopped
1 Clove garlic, minced
1 Tsp smoked paprika
1 Tsp dried oregano
1/2 Tsp chilli powder, or more to taste
1 Tsp onion powder
1 Tsp cumin powder
450 g ground beef or vegan alternative
Salt & black pepper to taste
1 Avocado, sliced
Chopped parsley
Lime wedges for serving

Sauce
1/4 Cup (60 g) yogurt
1/2 Avocado
1 Clove garlic, minced
1/4 Cup chopped parsley

 

Instructions:


1. To make the tortillas mix all ingredients for the dough. Lightly flour a working surface with the Pancake & Waffle mix. Form a ball then roll and cut circles, They have to be about 1/3 cm thick.
2. Grease a frying pan over medium heat and cook the tortillas on both sides for about 2 minutes per side. Place the ready tortillas on a plate, cover with plastic bag and set aside.
3. To make the filling, heat the oil in a large frying pan. Add onion and cook for 5 minutes, until translucent. Add garlic and cook for 30 seconds. Add smoked paprika, oregano, chilli powder, onion powder and cumin. Cook for 1 more minute stirring frequently.
